Almond milk is effin’ expensive. I usually buy mine from the Bliss Juicery ’cause it’s down the road from my place and also their milks are FRESH and amazing. But still expensive. I mean I get it, almonds are ridiculously expensive all by themselves! Nevermind the extra stuff that goes in, plus all the time it takes… right? I put off making almond milk for ages cause I really thought it would just be WAY too much effort. Until a friend of mine decided to make it as part of breakfast for us one day and I was instantly converted. Besides the part where you have to remember to actually soak the almonds over night (this is the hardest part for reals) it took maybe 15 minutes to blitz it up in the Nutribullet and strain.
Don’t get me wrong, I don’t make it every week now. I still actually try and just stick to eating food in it’s most natural state and I am really trying to avoid too many porridges and even natural sugars. But everyone wants a treat sometimes! Plus when I DO decide to batch make some quinoa porridge then I want the real-deal almond milk in there. Not this sugar-filled store-bought crap.
So I will definitely try variations in the future – but for now, cinnamon is my JAM (is there a potential pun in there…?) and this milk is really delicious 🙂
Cinnamon Almond Milk
- 1 cup raw almonds
- 4 - 6 cups water
- 2 tbsp ground cinnamon the good stuff like Nature's Choice
- Pinch of sea salt
- 4 - 6 pitted dates
- 1 tsp vanilla extract
Soak the almonds in 1 - 2 cups of water over night.
The following day, drain the almonds and return to your blender. Add 3 cups of water, the dates, cinnamon and vanilla extract and blend on high speed until smooth.
Use a muslin cloth (or cheese cloth or nut cloth) to drain the milk into another container. You can squeeze the milk out of the cloth using your hands to speed up the process.
My milk kept in the fridge in a sealed bottle for 5 days. You can usually smell once it has gone off - it tends to smell really sour.
According to my calculations it cost me about R40 to make one litre of milk. I buy the bulk almonds and get dates from my local grocer so it's actually an incredibly affordable recipe!
